Beet salad (valentine’s edition)


beetsalad to serve with #redwine🍷


This winter salad is so colourful and has a mild sweet taste. It goes well with red wine.


All you need to make this amazing salad is: #beetroots #oranges #avocados #feta crumbled and #walnuts🍊🍊🍊🥑🥑🥑

For dressings you need:

Juice of half an orange, #olive oil and #balsamic vinegar.

And cilantro to finish the look.😉


Ingredients (for 2 servings)


Salad


  • 3 medium Beetroots

  • 2 oranges

  • 1 avocado


Dressings


  • Juice of half an orange

  • 1/2 Tbsp olive oil

  • 1/2 Tbsp balsamic vinegar


Toppings


  • 1 Tbsp crumbled feta cheese

  • 1 Tbsp walnuts

  • 1 Tbsp cilantro



Preparation:


  1. Remove the stems and leaves of beets and scrub the dirt.

  2. Wrap beets with parchment paper and bake them in 400 F checking them every 20 min till they are fully baked.(50 min)

  3. Peel the beets and slice them.

  4. Peel oranges and cut them from the length 🍊🍊

  5. Slice the avocado from the length.🥑


For dressing :


  • mix orange juice, olive oil, balsamic vinegar, salt and pepper in a bowl.🍊🍊🍊🍊


In a flat serving plate layer the beets fist, then oranges and the last avocado.


Pour the dressing now so it doesn’t change the colour of cheese and cilantro.


Add a spoon full feta crumbles and walnuts.

Sprinkle cilantro on top.🌱👌🏻🥗
