
Spicy quinoa black bean salad
What makes this super food so healthy is the fact that it’s packed with vegetables and herbs, for plenty of vitamins and minerals such as iron and calcium. Paired with quinoa and black beans, which are both good sources of fiber and protein, and a little extra-virgin olive oil, which helps with fat-soluble vitamin absorption, this salad makes a filling and satisfying lunch or dinner.
This salad can be made ahead of time and kept in the fridge.
Ingredients:
1 cup cooked quinoa
1 cup cooked black beans
1 cup diced grape tomatoes
1 cup diced avocados
1/4 cup diagonally sliced green onions or red onions (optional)
1 jalapeño sliced
2 garlic cloves
2 Tbsp olive oil
1 Tbsp cider vinegar
1 Tbsp lime juice
Salt
2 Tbsp Cilantro chopped coarsely
Instructions:
In a large bowl mix quinoa, black beans, tomatoes, avocado, onions and jalapeño.
In a small bowl whisk garlic in olive oil, vinegar and lime juice .
Pour the dressing on salad and mix well.
Season with salt.
Top it with cilantro .
