Apricot makes this salad a well balanced mix of sweet and sour. With the coolness of cucumber and celery you won’t need more for a summer meal.
Ingredients:
5 celery stalks sliced
5 Persian cucumber sliced
5 apricots cut in halves
1/4 cup pecan
1 Tbsp dill chopped
2 Tbsp olive oil
2 Tbsp lemon juice
Salt and pepper
Instructions:
In a salad bowl mix celery, cucumber and apricot
In a small bowl whisk olive oil, lemon juice, salt and pepper.
Pour the dressing on salad mix
Top it with pecans and dill.
