Apricot salad

Apricot makes this salad a well balanced mix of sweet and sour. With the coolness of cucumber and celery you won’t need more for a summer meal.


Ingredients:


  • 5 celery stalks sliced

  • 5 Persian cucumber sliced

  • 5 apricots cut in halves

  • 1/4 cup pecan

  • 1 Tbsp dill chopped

  • 2 Tbsp olive oil

  • 2 Tbsp lemon juice

  • Salt and pepper


Instructions:


  1. In a salad bowl mix celery, cucumber and apricot

  2. In a small bowl whisk olive oil, lemon juice, salt and pepper.

  3. Pour the dressing on salad mix

  4. Top it with pecans and dill.
