Asparagus and prosciutto

Adding salty prosciutto to a green dish makes it more tasty also colourful.


  • 4 prosciutto slices

  • A bunch of asparagus

  • 2 Tbsp mayonnaise (plant based)

  • 2 Tbsp chopped #mint and #tarragon

  • 1 hard boiled egg grated

  • Juice of half a lemon 🍋

  • Salt and pepper


  1. Cook asparagus in a boiling water for 3-4 minutes. Drain and put them in a cold water to keep the green colour.👩‍🌾

  2. In a bowl mix mayonnaise, herbs, egg, lemon juice and salt and pepper.🍋🍋

  3. Wrap every 2 or 3 asparagus with prosciutto.

  4. Lay them in a plate and cover with the sauce. 👌🏻
