Berry buckle

I have made this very berry dessert so many times when we crave sweets to have with our evening tea and it has always been great with no flaws.

The recipe is originally the one you can find on the package of PC frozen mix berries with some minor changes.


Ingredients:


  • 1 1/2 cups all purpose flour

  • 3/4 cup brown sugar

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 egg, beaten

  • 2/3 cup milk 2%

  • 1/4 cup butter melted

  • 1 tsp vanilla

  • 1 tsp allspice

  • 3 cups berry blend

  • 1/4 cup brown sugar

Instructions:

  1. Preheat oven to 350F. Lightly grease an eight inch baking dish.

  2. In a bowl mix together flour, 3/4 cup brown sugar, baking powder and salt. In another bowl whisk together egg, milk, butter, vanilla and allspice, pour over flour mixture and stir to combine.

  3. Pour the mixture into the prepared baking dish.

  4. Toss frozen berries with 1/4 cup sugar. Sprinkle evenly over batter.

  5. Bake 55-60 minutes or until tester inserted in centre comes out clean.

  6. This cake is moist.
