Passion fruit rum cocktail

Rum is the favourite in Caribbean. I love rum cocktails because they remind me of my good memories, hot weather, Spanish language, warmth of the people and their smiles, ocean and it’s calming sound.

The trick in rum cocktails is that you need to make sure to use a good quality rum.

The ingredients below serves 2.

Ingredients:

• 2 Tbsp brown sugar

• 1/2 cup rum

• 1 cup passion fruit juice (with or without pulp)

• Juice of 2 limes

• Half of passion fruit and thyme springs for garnish

Instructions:

1. Stir 1 Tbsp hot water into brown sugar to make a syrup.

2. Place all ingredients in a shaker and shake well until well combined.

3. Add ice and shake again.

4. Serve chilled or over ice.

5. Garnish with passion fruit and thyme springs.
