Pear and goat cheese pastry

Ingredients for 4 pieces

  • 1 block Tenderflake® Puff Pastry rolled on flour dusted surface and cut into 4 pieces

  • 2 Pears

  • 1 Tbsp. (30ml) brown sugar( if needed, sometimes pears are not sweet enough)

  • 1/4 tsp (1ml) salt

  • 3 Tbsp. (44ml) grainy mustard

  • 1 egg, lightly beaten with 1 Tbsp. water

  • 1/3 cup (78ml) crumbled goat cheese

  • 3 Tbsp. (44ml) walnuts, roughly chopped

  • Basil or thyme springs (Optional)


  1. Preheat oven at 350F.

  2. In a small bowl mix sugar, salt and grainy mustard.

  3. Spoon the mustard mix in the middle of pastries.

  4. Cut pears into thin slices and lay them on top of mustard mix.

  5. Use the egg blend to brush the edges of pastry.

  6. Place the pastries on a lightly greased baking sheet and bake for 15-20 minutes until they turn golden brown.

  7. Take them out and sprinkle crumbles of goat cheese, walnuts and garnish with basil springs.
