
Tomato, mozzarell, basil pizza
Ingredients for 2 pizzas
2 pieces of pizza dough (see the pizza dough recipe)
1/2 cup pesto
2 stems of million cherry tomatoes on vines
4 cups grated mozzarella cheese (sliced mozzarella is also good to use for toppings if you are using slices for toppings then use 2 cups of grated cheese)
1 bunch basil
Extra virgin olive oil for drizzling

Instructions:
Preheat oven to 450F.
With flour dust a pizza baking pan and spread the dough in it.
Spread 1Tbsp of the pesto and cover with grated cheese put the tomatoes in the middle and add more cheese to cover them.
Put the cheese slices on top.
With a teaspoon add pesto locally on top.
Bake pizza for 5 minutes. Turn on the broiler and broil until the top is golden and tomatoes get tender ( about 4 min)
Take the pizza out and let it cool a bit then add the basil leaves and if you like drizzle olive oil.
Repeat with the remaining dough and toppings.
