Vermicelli soup


Vermicelli soup


This soup has been The Soup in my family in winter. We had it in our grandma’s place and in my aunt’s and our own home.

It has a very simple recipe with very few ingredients but the main ingredient in it is “love of family”.


Ingredients:


  • 1/2 lbs chicken breast

  • 2 onions chopped

  • 1 cup carrots chopped

  • 1 cup potatoes chopped

  • 1 tsp turmeric

  • 1/2 Tbsp tomato paste

  • 1 cup vermicelli

  • 1/4 cup chopped parsley

  • Salt and pepper

  • Lemon wedge on the side


Instructions:


  1. In a large pot, put the chicken breast and onions. Add 6 cups of water and bring it to boil.

  2. Add turmeric and tomato paste.

  3. When chicken is cooked bring it out and cut or shred into small pieces. Put them back to the pot.

  4. Add potatoes and carrots and keep cooking until they are tender.

  5. Add vermicelli and cook for another 3 minutes or until the noodles are fully cooked.

  6. Season with salt and pepper.

  7. Serve it a bowl and add parsley on top. Put the lemon wedge on the side.
