Beet orange and avocado salad


🍊🍊🍊🥑🥑🥑


On my last trip to #portperryfarmersmarket I got awesome beets which brought up this recipe for a colourful salad.

The sweet and tangy taste makes a perfect appetizer or even a whole meal for small gathering especially when wine is served.


Ingredients:

  • 5-6 medium size red and golden beets (cooked in boiling water)

  • 3 avocados cut lengthwise

  • 3 oranges peeled and cut lengthwise.

  • Home made croutons (make bread cubes using an old fashion bread. Spray some olive oil and sprinkle some salt and pepper. Bake in the oven at 375 F until they turn golden brown and crispy)

  • 1/2 cup feta cheese crumbles

  • 1/4 cup walnuts or pecans

  • 1/2 cup chopped cilantro

  • 3 Tbsp olive oil

  • 2 Tbsp balsamic vinegar

  • Juice of half an orange

  • Salt and crushed black pepper to taste

Instructions:


  1. In a large bowl, add the beets and oranges and mix them.

  2. In a large flat serving dish, lay the mix of beet and oranges 🍊

  3. Add the avocados 🥑

  4. Top the salad with cheese, croutons, walnuts.

  5. In a small bowl whist olive oil, vinegar, and orange juice, add some salt and pepper.

  6. Add the dressing to the salad and sprinkle the chopped cilantro.
