On my last trip to #portperryfarmersmarket I got awesome beets which brought up this recipe for a colourful salad.
The sweet and tangy taste makes a perfect appetizer or even a whole meal for small gathering especially when wine is served.
Ingredients:
5-6 medium size red and golden beets (cooked in boiling water)
3 avocados cut lengthwise
3 oranges peeled and cut lengthwise.
Home made croutons (make bread cubes using an old fashion bread. Spray some olive oil and sprinkle some salt and pepper. Bake in the oven at 375 F until they turn golden brown and crispy)
1/2 cup feta cheese crumbles
1/4 cup walnuts or pecans
1/2 cup chopped cilantro
3 Tbsp olive oil
2 Tbsp balsamic vinegar
Juice of half an orange
Salt and crushed black pepper to taste
Instructions:
In a large bowl, add the beets and oranges and mix them.
In a large flat serving dish, lay the mix of beet and oranges 🍊
Add the avocados 🥑
Top the salad with cheese, croutons, walnuts.
In a small bowl whist olive oil, vinegar, and orange juice, add some salt and pepper.
Add the dressing to the salad and sprinkle the chopped cilantro.
