Fennel is a #Mediterranean vegetable which is now popular all around the world. All parts of fennel is edible, bulb, stalks, leaves and seeds.
I use fennel in #salad recipes in combination with other vegetables and the seeds to make tea blends.
This simple salad is just fennel bulb cut into thin slices with lemon and olive oil dressing.
I love this salad especially with fish and sea foods.
Ingredients:
1 fennel bulb thinly sliced
Juice of 1 lemon
1 Tbsp olive oil
1 tsp lemon zest
Salt and pepper
1 Tbsp fennel leaves to garnish
Instructions:
In a small bowl whisk lemon juice and olive oil. Add lemon zest, salt and pepper.
In a large bowl put the fennel slices and add the dressing and mix.
Serve the salad on a plate and garnish with fennel leaves.
