Zucchini pasta with cherry tomato and walnut

With so few ingredients, yet high quality make this vibrant dish.


  • 1 cup cherry tomatoes cut in half

  • 1 garlic clove pressed

  • 1/4 cup chopped walnuts

  • 2 Tbsp fresh basil leaves torn plus some whole leaves for garnish

  • 2 Tbsp olive oil

  • Sea salt

  • 1 zucchini


  1. In a bowl combine tomatoes, garlic, walnut, torn basil and olive oil. Season with salt. Let stand for 10 min.

  2. Thinly slice zucchini or use the shredding tool. Add tomato mix and toss to combine.

  3. Garnish with basil leaves.
